The sunlight of August and an expanse of red tomatoes just picked from our fields. Thus were born the dried tomatoes of Antica Enotria. Dried tomatoes in extra virgin olive oil, thanks to the decisive flavor, are the protagonists of appetizers, friselle, original sandwiches. The savory taste is ideal to accompany fresh and aged cheeses.
The organic agriculture of Puglia is Ancient Enotria. Since 1993 we cultivate our land with love to preserve the tradition of taste and with a single goal in the heart: the authenticity of our products. For this reason, since the beginning of our adventure, we are organic farmers.
Antica Enotria is located in Cerignola, in Puglia. The vines and fields extend from the interior towards the sea, a mix of landscapes made of sun and wind that gives a terroir unique in the world. The cellar is located inside the ancient Contessa Staffa farm, a noble building dating back to the 1700s. It is here that the company produces wine and preserves, tomatoes and organic sauces.
The organic preserves are made following the typical Apulian recipes handed down from generation to generation giving the palate intense moments of flavors lost over time. Preserves in oil, pickled olives, tomatoes and ready-made sauces are created only with raw materials according to the organic farming method and collected exclusively from the fields owned by the family.
Each product is processed following the natural seasonality of the fruit. Tomatoes, “Bella di Cerignola” olives and vegetables such as aubergines and artichokes are harvested once they reach the right degree of ripeness. Taken to the masseria, they are stored by skilled hands in glass jars within a few hours.
