Hand-cut, according to an ancient family recipe, the aubergines are immersed in our extra virgin olive oil. In this way an inimitable delight is obtained.<\/p>\n<p>The organic agriculture of Puglia is Antica Enotria. Since 1993 we cultivate our land with love to preserve the tradition of taste and with a single goal in the heart: the authenticity of our products. For this reason, since the beginning of our adventure, we are organic farmers.<\/p>\n<p>Antica Enotria is located in Cerignola, in Puglia. The vines and fields extend from the interior towards the sea, a mix of landscapes made of sun and wind that gives a terroir unique in the world. The cellar is located inside the ancient Contessa Staffa farmhouse, a noble building dating back to the 1700s. It is here that the company produces wine and preserves, tomatoes and organic sauces.<\/p>\n<p>The organic preserves are made following the typical Apulian recipes handed down from generation to generation giving the palate intense moments of flavors lost over time. Preserves in oil, pickled olives, tomatoes and ready-made sauces are created only with raw materials according to the organic farming method and collected exclusively from the fields owned by the family.<\/p>\n<p>Each product is processed following the natural seasonality of the fruit. Tomatoes, &#8220;Bella di Cerignola&#8221; olives and vegetables such as aubergines and artichokes are harvested once they reach the right degree of ripeness.
