Vineyard: Trained to spurred cordon, with a yield of 70 quintals per hectare<\/p>\n

Vinification: After harvesting in the middle of September, the grapes are de-stemmed and pressed. The must undergoes a temperature-controlled fermentation in stainless steel for 15 days at a temperature of 26\u00b0C.<\/p>\n

Maturation: Negroamaro matures in large oak casks for 14 months, then another 6 months in the bottle before release.<\/p>\n

Sensory profile: It appears a purple-tinged ruby red. The bouquet displays the classic fragrances of blackberry and fruit preserves, enriched by hints of toasty oak and vanilla. The palate is full-volumed, seductive, and smooth, complemented by a crisp acidity and dense-packed but not aggressive tannins.<\/p>\n

Negroamaro IGT Puglia is an organic red wine made only with Negroamaro grapes. Its strong connection with the territory is evidenced by its typical taste. In the mouth it is full, enveloping, soft but supported by a pleasant freshness and a dense but not aggressive tannins. The color is ruby red with purple hues. The scent is characteristic of blackberries and jam, with notes of toasting and vanilla.<\/p>\n

Pairings<\/em><\/h3>\n

Negroamaro IGT Puglia goes perfectly with traditional Apulian dishes. Ideal with first courses of fresh pasta with sauce and cacioricotta, it also goes well with first courses with legumes and seasonal vegetables. It does not disdain the combination with particular meat-based dishes such as the famous “torcinelli” and is made from lamb’s intestines filled with lamb’s sweetbreads.<\/p>\n<\/div>\n
