Make a crispy focaccia with cherry tomatoes and oregano!

Also known as “focaccia pugliese” or “focaccia barese,” this delicacy is loved and consumed daily by many Apulians, accompanying different moments of their day. It is characterized by a soft texture, crispy on the outside and soft on the inside. Prepared with simple ingredients like flour, water, extra virgin olive oil, salt, and yeast, it is a versatile dish that can be enriched with black olives, cherry tomatoes, onions, rosemary, and other tasty ingredients.

Focaccia is particularly loved as an appetizer or snack during aperitivo time. Cut into squares or strips, it is often filled with prosciutto, cheese, fresh tomatoes, or marinated eggplant.

Here’s the recipe we propose:

Ingredients for the dough
  • 300g all-purpose
  • flour 200g bread flour
  • 300g water
  • 20g fine salt
  • 5g brewer’s yeast
  • 25g extra virgin olive oil
Ingredients for the topping
  • 500g all-natural cherry tomatoes
  • Pinch of oregano, extra virgin olive oil and coarse salt.
Preparation

To make a delicious focaccia with cherry tomatoes and oregano, start by creating the dough by mixing water and flour by hand, then add honey and brewer’s yeast. Pour the water into the dough, making sure to combine it with fine salt. Once the dough has absorbed the water well, add the olive oil and place it on a floured surface. Shape the dough into a spherical form and let it rise for about two hours. Now, cut the all-natural cherry tomatoes in half and squeeze out the excess liquid. Set them aside with the oregano. Place the risen dough in an oiled baking pan and carefully spread it out. Now, cover the dough with the cherry tomatoes, making sure to add a drizzle of olive oil and coarse salt. Finally, sprinkle some oregano and let it rise for another 30 minutes. And now, all you have to do is bake it in a preheated oven at 190 degrees Celsius for three-quarters of an hour, and you’ll have a fantastic focaccia to bring to your table!
