Aglianico IGT Puglia is an organic red wine made only from Aglianico grapes. It is striking for its fascinating fragrance and its taste linked to the wine tradition. It is characterized by a ruby red color. The aromas are intense and complex of ripe fruit, berries, vanilla and other spices. In the mouth it is soft, warm and full. Aglianico IGT Puglia maintains a right freshness and an elegant tannicity, peculiarities that make it a balanced wine of great character.

Pairings

Aglianico IGT Puglia is characterized by a wonderful initial freshness that well enhances traditional Apulian dishes such as stuffed mushrooms au gratin or bread balls. It is ideal with meat, roast, chicken or lamb dishes on a spit and with game. It can also be served with seasoned cheeses.

Grape variety: Pure Aglianico

Vine: Trained using the “Pugliese trellis” method.

Yield: 6,000 kg. per hectare

Vinification: Mid October, when the grapes reach the ideal ripeness, they are harvested and placed in plastic crates in the wine cellar where they are immediately stripped of leaves and stems and crushed. Maceration occurs in stainless steel vats for 14 days, with frequent traditional  pumpovers and delestage (“rack and return’). The grapes are left to ferment in the juice at a controlled temperature of 28°C.

Aging: After alcoholic fermentation, the wine begins its period of malolactic fermentation in steel tanks for 6 months, followed by 12 months in 30 hectolitre oak casks.

Sensory characteristics: Deep ruby red colour. Intense and complex bouquet of ripe fruit, forest berries, vanilla and other spices. It’s velvety, warm and full on the palate; a correct freshness and an elegant tannic quality make it a balanced wine with great character.
